Okra Curry

Okra Curry is a spicy, savory dish that originated in India. Ingredients (2 Persons)

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground ginger
  • 2 pounds okra, sliced
  • 2 tomatoes, chopped
  • 1/2 cup water
  • Salt to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the cumin seeds and mustard seeds and cook until they start to pop, about 1 minute.
  • Step 2
    Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  • Step 3
    Stir in the turmeric, coriander, cumin, garam masala, chili powder, and ginger and cook for 1 minute.
  • Step 4
    Add the okra and tomatoes and cook, stirring frequently, until the okra is lightly browned, about 5 minutes.
  • Step 5
    Add the water and season with salt. Reduce the heat to low, cover, and simmer until the okra is tender, about 10 minutes.
