Beef and Potato Curry

Ingredients (2 Persons)

  • 2 pounds ground beef
  • 2 tablespoons vegetable oil
  • 2 onions, diced
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 potatoes, cubed
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the ground beef and cook until it is no longer pink, breaking it up into small pieces as it cooks.

    Add the onions and garlic to the skillet and cook for 2 minutes, until the onions are softened.
  • Step 3
    Stir in the ginger, coriander, cumin, turmeric, cinnamon, and cayenne pepper. Cook for 1 minute, until the spices are fragrant.

    Add the potatoes, diced tomatoes, and coconut milk to the skillet. Bring the mixture to a simmer and cook for 15-20 minutes, until the potatoes are tender.

    Season the curry with salt and pepper to taste. Stir in the cilantro and cook for 1 minute.

    Serve the curry hot, with cooked rice or naan bread.
