Vegetarian Korma Curry

Ingredients (2 Persons)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons grated ginger
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (or more to taste)
- 1 (14 oz) can diced tomatoes
- 1 (14 oz) can coconut milk
- 1 (14 oz) can chickpeas, drained and rinsed
- 1 cup frozen peas
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Directions

Step 1
Heat the oil in a large skillet over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic, ginger, cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook for another 2 minutes.

Stir in the diced tomatoes, coconut milk, chickpeas, and frozen peas. Bring to a simmer and cook for 10-15 minutes, or until the vegetables are tender.
