Japanese Ramen

Ingredients (2 Persons)

  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 2 (3 oz) packages ramen noodles
  • 2 cups bok choy, chopped
  • 1/2 cup carrots, shredded
  • 1/2 cup mushrooms, sliced
  • 2 green onions, chopped

Directions

  • Step 1
    In a large pot, bring the vegetable broth, soy sauce, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes to a boil over high heat.
  • Step 2
    Add the ramen noodles and cook for 3 minutes, stirring occasionally.
  • Step 3
    Add the bok choy, carrots, mushrooms, and green onions to the pot and cook for an additional 2 minutes, stirring occasionally.
  • Step 4
    Divide the ramen among 4 bowls and ladle the broth over the noodles. Serve immediately.
