Vegetarian Sushi Rolls with Mango

Ingredients (2 Persons)

  • 4 sheets of nori
  • 2 cups cooked sushi rice
  • 1 mango, peeled, pitted and diced
  • 2 tablespoons sesame seeds
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt

Directions

  • Step 1
    Lay a sheet of nori on a sushi rolling mat. Spread 1/2 cup of cooked sushi rice over the nori, leaving a 1/2-inch border around the edges.
  • Step 2
    Sprinkle the diced mango over the rice. Sprinkle the sesame seeds over the mango.
  • Step 3
    Carefully roll the sushi up, using the mat to shape it. Repeat with the remaining nori sheets and ingredients.
  • Step 4
    In a small bowl, whisk together the rice vinegar, sugar and salt. Cut the sushi rolls into 8 pieces each, and serve with the vinegar mixture for dipping.
