Lamb and Spinach Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 pound ground lamb
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can coconut milk
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups baby spinach

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the ground lamb and cook until it is no longer pink, breaking it up into small pieces as it cooks.
  • Step 2
    Add the onion and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
  • Step 3
    Stir in the garam masala, cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Add the diced tomatoes, coconut milk, brown sugar, salt, and black pepper to the skillet. Bring the mixture to a simmer and cook for 5-7 minutes.
  • Step 5
    Add the spinach to the skillet and cook until it is wilted, about 1-2 minutes. Serve the curry over cooked rice or quinoa.
