Vegan Potato Curry

- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 4 potatoes, peeled and cubed
- 1 (14-ounce) can coconut milk
- 1 cup vegetable broth
- 1 teaspoon salt
- 1/4 cup chopped fresh cilantro
- 1 lemon, juiced
Directions

Step 1
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until it is softened and beginning to brown, about 5 minutes.

Add the garlic, ginger, curry powder, cumin, coriander, turmeric, cardamom, cinnamon, and cayenne pepper (if using) to the skillet and cook until fragrant, about 1 minute.

Add the potatoes, coconut milk, vegetable broth, and salt to the skillet. Bring the mixture to a simmer, then reduce the heat to low and cook, stirring occasionally, until the potatoes are tender, about 15 minutes.
