Pumpkin & Chickpea Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 ounce) can diced tomatoes
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 (15 ounce) can pumpkin puree
  • 1 cup vegetable broth
  • 1/4 cup coconut milk
  • Salt and black pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for 1 minute.
  • Step 3
    Stir in the curry powder, cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1 minute, until the spices are fragrant.
  • Step 4
    Add the diced tomatoes, chickpeas, pumpkin puree, vegetable broth, and coconut milk to the skillet. Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally.
  • Step 5
    Season with salt and black pepper to taste. Serve with cooked rice or naan.
