Vegan Tofu and Broccoli Curry

Ingredients (2 Persons)

  • 1 lb. extra-firm tofu, drained, pressed, and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1 jalapeno pepper, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 2 cups vegetable broth
  • 1 (14-ounce) can full-fat coconut milk
  • 4 cups broccoli florets

Directions

  • Step 1
    Heat a large skillet over medium-high heat. Add the tofu and cook for 5 minutes, until lightly browned.
  • Step 2
    Add the onion, garlic, ginger, and jalapeno and cook for 3 minutes, until the vegetables are softened.
  • Step 3
    Stir in the curry powder, cumin, coriander, turmeric, chili powder, and salt. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Pour in the vegetable broth and coconut milk, stirring to combine. Bring the mixture to a simmer.
  • Step 5
    Add the broccoli florets and cook for 5-7 minutes, until the vegetables are tender and the sauce has thickened.
