Filipino Chicken Tinola

Ingredients (2 Persons)

  • 4-5 chicken thighs, cut into pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 thumb-sized piece ginger, grated
  • 3 cups chicken broth
  • 1 head of green papaya, diced
  • 1 red bell pepper, diced
  • 2 tablespoons fish sauce
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh cilantro, for garnish

Directions

  • Step 1
    Heat a large pot over medium heat. Add the chicken pieces and cook, stirring occasionally, until lightly browned, about 5 minutes.
  • Step 2
    Add the onion, garlic, and fish sauce to the pot and cook for 2 minutes, until the onion is tender.
  • Step 3
    Add the ginger and chicken broth to the pot and stir to combine. Bring the mixture to a simmer and cook for 10 minutes.
  • Step 4
    Add the papaya, bell pepper, fish sauce, and lime juice to the pot and cook for 5 minutes, until the vegetables are tender.
  • Step 5
    Stir in the black pepper and season with additional fish sauce, if desired. Simmer for a few more minutes, until the flavors have melded together.
  • Step 6
    Garnish with fresh cilantro and serve hot with steamed rice.
