Kale and Quinoa Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5-ounce) can diced tomatoes
  • 3 cups vegetable broth
  • 1 cup uncooked quinoa, rinsed and drained
  • 1 large bunch kale, stems removed and leaves chopped
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup fresh cilantro, chopped (optional)

Directions

  • Step 1
    Heat 1 tablespoon of oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Add the coriander, cumin, turmeric, cinnamon, and cayenne pepper and cook for 1 minute, until fragrant.
  • Step 3
    Stir in the diced tomatoes and vegetable broth and bring to a simmer. Add the quinoa, reduce the heat to low, and cook for 15 minutes.
  • Step 4
    Stir in the kale and cook for an additional 5 minutes, until the kale is wilted. Stir in the chickpeas, cilantro (if using), and remaining tablespoon of oil.
  • Step 5
    Serve hot.
